It’s Christmas Cookie season! We’ve wrapped up our marshmallow-making (now desperately hoping that USPS delivers!) and are now into the cooking-baking zone. Today I share with you a wonderful recipe for Clementine Cake. I know, that sounds unusual, but it was pretty easy and unexpected. The cake is really moist and not too overwhelming. And, for those of you who care, it’s gluten free! Honestly that didn’t even occur to me until I was mid-baking, but yay for those of you who are looking for something new that is flourless. This cake is also one of those that tastes better the next day – if you’re lucky enough to have leftovers, that is. Because I’m not taking my baked goods into the office anymore, I always have leftovers nowadays, and you might be in the same boat.
20 of the past 27 days have been over 90 degrees here. Consequently, I haven’t been baking a whole lot. This Danish was an exception – it’s what I call a “cheat” recipe, using pre-made ingredients…but sometimes that’ll have to do. The baking time is short and so isn’t too painful.
Summertime! It’s July! Our lockdown has moved from the living room to the backyard since the season allows. And, along with grilling s’mores, it’s totally ice cream time. As has been an ongoing effort on this blog, we often try to share recipes for using our Sweet Jumbles marshmallows. Today, we tackle the traditional favorite of vanilla, chocolate, and strawberry – aka Neapolitan.
Like many, I’ve been doing a lot of baking during the shut-down, and this Bacon Toffee Cookie is based on several other recipes that I came across and modified into one new cookie. Clearly, not something for vegetarians.
It’s something like day 742 of the shutdown, and I found flour, so I’ve been baking. I’m running low on butter, so we’ll see how long the baking lasts. My sourdough starter is taking forever to expand, which the interwebs claims is not a problem, and since I’ve got all the time in the world I’m rolling with it.
I found a recipe for a delicious simple cookie that will complement any season, any beverage, and uses ingredients that you most likely have on-hand at home. These Pecan Fingers are light and buttery, and the nuts add a nice touch.
I have lots of time at home to bake, which is I guess a silver lining at the moment…. The Quarantine Fifteen is coming fast.

Early March was a long time ago, wasn’t it? My thoughts were certainly not on quarantines and social isolation. But, I did know that St. Patrick’s Day was coming up. I found a bottle of whiskey at my home. I don’t know when or how I came to possess it considering the fact that I don’t drink whiskey. It’s OLD.
