Fruit and Marshmallow Cornucopia two ways

cornucopia (1)

To me, summer means fruit: strawberries, blueberries, watermelon.  Fruit on ice cream. Fruit on angel food cake. Fruit tarts. Smoothies. There are no limits!

Today’s recipe is for Fruit and Marshmallow Cornucopia – a waffle cone filled with your favorite berries and some marshmallows. This can be enjoyed two ways. First, just as-is –  this is a great dessert to serve kids or  guests at a picnic. No dishes needed, no need to turn on the oven! The second option is to wrap the filled cone with foil and throw it on the grill or campfire to melt the marshmallows. The ooey gooey result is a perfect camping treat.

Ingredients

a handful of your favorite berries
1 Sweet Jumbles marshmallow, quartered (we used Tangerine Dream, but your choice!)
1 waffle cone

Instructions

  • Drop one marshmallow into the tip of the cone.
  • Add a handful of berries and the remaining 3 marshmallow quarters.  Serve.
  • OR, if heating, wrap in foil and set on a grill or campfire until melted.  Time will depend on temperature of the fire, but just about 5 minutes should do it.
