Tropical S’Mores

Tropical SMores (1)S’Mores are, for many, a summertime favorite. I’ve seen twists on the traditional marshmallow-graham cracker-chocolate combo, such as using a different cookie, or putting a Reese’s or other candy in place of the chocolate.

But, a take which only recently occurred to me was to lighten things up just a bit with fruit.


This recipe, therefore, is not so much a recipe, but an “idea.”  First, replace the graham cracker with a summery cookie of choice. Shortbread is universally one of my favorite cookies, so I chose a lemon shortbread bar that I previously posted on this blog (for alternates, see also the Sweet Jumbles recipes for Lemon Verbena or Lavender Citrus shortbread).

Ingredients

1 Sweet Jumbles marshmallow (flavor of your choice)
2 shortbread cookies (or summertime cookie of choice)
Fruit slices
Carmel drizzle

Directions

  • Make or buy your favorite summer cookie.
  • Slice fruit.  Strawberries work great because they can be sliced thin enough to stay atop a marshmallow. Get creative.
  • Cut one Sweet Jumbles marshmallow in half and toast.  You’ll need half of a marshmallow per s’more. Vanilla marshmallows are your classic choice, but pump up the fruit theme if you’d like with strawberry, tangerine, or other fruity flavors.  Toasting can be done over an open campfire, grill, or with a kitchen torch.
  • Build two s’mores – cookie base, marshmallow, fruit, and a final drizzle of caramel sauce.  You’re going to want an “open faced” s’more since shortbread (and most other) cookies are invariably thicker than graham crackers.
  • Don’t hesitate to jazz things up – add chocolate drizzle, toasted coconut, etc.!
