Cinnamon Apple Cookies

Apple Cookie SmallI love the traditional fall flavors, and these Cinnamon Apple Cookies capture exactly that.  Rather than using fresh apples, these cookies incorporate apple butter, adding extra depth of spice.

Ingredients

5 T unsalted butter, room temperature
½ c light brown sugar
1 large egg yolk
1 t vanilla extract
3 T apple butter
1 c + 2 T all-purpose flour
1 t ground cinnamon
½ t baking soda
½ t salt
¼ t allspice
1/8 t ground ginger
1/8 t ground cloves
2 T sugar
½ t ground cinnamon

Directions

  • Preheat oven to 350 F.   Line baking sheets with parchment paper or Silpat.
  • Using an electric mixer, combine butter, brown sugar, egg yolk, vanilla, and apple butter.  Cream until well combined.
  • In a separate bowl, combine flour, 1 teaspoon ground cinnamon, baking soda, salt, allspice, ginger and cloves.  Whisk to combine.
  • Gradually add flour mixture to wet mixture.
  • Cover with plastic wrap and refrigerate for 15 minutes to stiffen.
  • Combine sugar and ½ t ground cinnamon in a small bowl.
  • Roll chilled dough into 1.5-Tablespoon sized balls with your hands.  Roll in cinnamon sugar to coat thoroughly.
  • Arrange balls on prepared baking trays.  They will spread, but not a lot.
  • Bake 10-12 minutes until golden around the edges.  Cookies will deflate slightly and crackle during cooling, this is expected.
  • Cool slightly on trays and then finish cooling on a cooling rack.
