Watermelon Krispies

Watermelon Krispie1This post is less about a recipe and more about fun. Most readers will have already made krispy treats.  These are a variation of that, intended to make children (or the young at heart) smile.  If you know how to make krispy treats and you have a springform pan, this should be a breeze.

Ingredients
Rind
1 ½ T salted butter
4 vanilla Sweet Jumbles Marshmallows
Green food coloring
2 cups crisp rice cereal

Melon
2 T salted butter
6 vanilla Sweet Jumbles Marshmallows
Pink/red food coloring
3 cups crisp rice cereal
2 t mini chocolate chips

Instructions

  • Spray a 9-inch springform pan with non-stick cooking spray, set aside.
  • Make the “watermelon rind.” Melt 1 ½ T butter in a medium non-stick saucepan over medium heat.
  • Add 4 Sweet Jumbles marshmallows and green food coloring (I used gel for a bolder color), stirring until marshmallows have melted.
  • Remove from heat and add 2 cups crisp rice cereal until evenly coated.
  • Using your hands, (you may have to let cool just slightly so you don’t burn yourself) press mixture around outer edge of pan, creating the look of a rind, approximately 1-inch thick.  Don’t press too hard or the bars will become too dense.  If the mixture is too sticky, simply wet your hands and you will be able to better manipulate the krispies.
  • Clean and dry saucepan, and repeat the process for the “melon.”  Melt 2 T butter in saucepan over medium heat.
  • Add 6 Sweet Jumbles marshmallows and red or pink food coloring (I again used gel for a bolder color), stirring until marshmallows have melted.
  • Remove from heat and stir in 3 cups crisp rice cereal.
  • Again using your hands press mixture into the center of the pan, creating the melon.
  • Let cool slightly and then press chocolate chips randomly over pink portion. Cut into wedges. Store in an airtight container.
